I'm sure you will have a "Wonder-Full" trip to the Costa del Sol. As far as weather is concerned, the daytime temp should be around 75 and the nights cool to about 60 or so. Of course those are just averages and temps can fluctuate so I would suggest some layering or a lightweight jacket for evenings.
As far as optional tours... first decide how "busy" you want to be. If you want to be on the go all the time and see everything.. all of the optionals are great. If you want more free time to relax, explore the local village and shop then perhaps select only two. I would suggest the overnight to Morocco and the day trip to The Ahlambra...(of course Ronda & Seville are beautiful as well). They will explain all the optional tours to you before you need to make a decision.
As far as people returning to the Costa del Sol, I can only speak for myself. I love just unpacking once and not living out of a suitcase for two weeks and The Bajondillo has a perfect location. It captures the feeling of a village with winding stairs peppered with shops up to San Miguel street to the center of Torremolinos.
