This Pappardelle with Porcini Mushrooms dish from the Tuscan coast of Italy looks as simple to prepare as it is delicious to eat. I love this pappardelle because there is so much room for improvisation. And it features mushrooms, one of the more intriguing collectables that Italians love to pursue in the autumn. Travelers can join in too, as long as you pay the 15 euro mushroom tax and observe the rule of “no mushroom picking at night!” Then pull out a bottle of your favorite wine. With a good pappardelle pasta, you can’t go wrong!
