This short segment of Culinary Journeys features world-famous chef Massimo Bottura and his three-Michelin star restaurant Osteria Francescana, located in Modena, Italy. In 2017, Osteria ranked second on the “The World's 50 Best Restaurants” list. In 2016, it ranked first. Massimo maintains the prestigious reputation of his restaurant through deep-seated passion, and his ability to find inspiration in anything. To most, potato skins are a mundane part of a staple starch, but to Massimo, they have more interest and value than a truffle. He is constantly reimagining traditional recipes using ingredients indigenous to his home land. Massimo’s devotion to his national cuisine is immediately evident, especially when he says: “My muscles are made by parmigiano-reggiano, in my veins there’s balsamic vinegar.”
