What’s in a name? As Grand Circle Corporate Executive Chef Christian Seegatz explains, when he created the recipes for these fruit-based dessert soups, he drew inspiration from the German holiday beverage known as Egg Flip; more commonly known to Americans as Egg Nog, the drink’s name derives from the fact that “flipped,” or beaten, egg yolks are its primary ingredient.
While early versions of Chef Seegatz’s “Flip” soups included egg yolks, he has since omitted them from his recipes. Yet, while their namesake ingredient may be missing, these simple but delicious soups—which are menu staples on all of our European River Cruises—are resoundingly popular with Grand Circle travelers, who have deemed them worthy of “flipping” for.
Peach Yogurt Flip
Ingredients:
3/4 cup plus 1 Tbs. plain yogurt
1/4 cup buttermilk
2 Tbs. whole milk
2 Tbs. heavy cream
2 1/2 Tbs. chopped canned peaches
2 tsp. liquid from can
Toasted slivered almonds, for garnish
Preparation
- Place all items (except for garnish) in blender.
- Puree mixture until smooth.
- Refrigerate for one hour, or until chilled.
- Pour into chilled pint glasses or soup cups. Garnish with almonds and serve.
Cranberry Yogurt Flip
Ingredients:
3/4 cup plus 1 Tbs. plain yogurt
1/4 cup buttermilk
2 Tbs. whole milk
2 Tbs. heavy cream
1/4 cup frozen cranberries, plus extra for garnish
3 1/2 Tbs. cranberry jam
Sweetener, to taste
Preparation Notes: Strain after blending; garnish with frozen whole cranberries.
Blackberry Yogurt Flip
Ingredients:
2 1/4 cups plain yogurt
1 cup buttermilk
1 3/4 cups whole milk
1 cup heavy cream
1 1/3 cups frozen blackberries
Sweetener, to taste
Toasted slivered almonds, for garnish
Banana Yogurt Flip
Ingredients:
1 3/4 cups plain yogurt
1 cup buttermilk
1 cup whole milk
1 cup heavy cream
1 3/4 cups overripe bananas
1/2 cup vanilla ice cream
Sweetener, to taste
Fresh mint leaves, for garnish
Toasted chopped hazelnuts, for garnish
Preparation Notes: Use only overripe fruit for this recipe; green bananas will alter the taste.
